I still want birthday cake, but since I'm not baking an entire cake until RTL returns home I opted for a peach cobbler to satisfy my sweet tooth. I tried a new recipe, so I'm including it here so you don't have to go hunting for it.


Recipe found on Recipe*zaar and credit for the recipe goes to Cheryl and Bill Jamison.

Filling
12-14 ripe peaches, peeled and sliced
1/4 cup sugar
1 teaspoon fresh lemon juice
2 teaspoons cinnamon
3/4 teaspoon powdered ginger
3/4 teaspoon vanilla

Batter
1/2 cup unsalted butter
1 1/4 cups flour
1 cup sugar
2 teaspoons baking powder
1 cup milk

Instructions

  1. Preheat oven to 350 degrees F.

  2. In a bowl, mix together all the filling ingredients

  3. Set aside.

  4. The filling will be a bit juicier than most pies

  5. Melt butter in a 9 x 13 baking dish in the oven.

  6. In another bowl, stir together flour, sugar, and baking powder, and then add the milk.

  7. Mix until lightly blended.

  8. Spoon the mixture evenly over the melted butter.

  9. DO NOT STIR.

  10. Pour the peach filling evenly over batter.

  11. Bake 45 minutes

  12. Serve warm, with vanilla ice cream or whipped cream if desired.



  13. I did half the recipe and used frozen instead of fresh peaches. I probably could have used a bit more than a 1 lb bag of frozen peaches. However, I believe that the amount of peaches should be whether you like more fruit vs topping or more topping vs fruit. Whichever, it was fantabulous!

Did you have your peach cobbler with some good, beany vanilla ice cream? 'Cause that is the appropriate way to eat cobbler. Yum. [livejournal.com profile] drmellow actually brought a peach home for me today... must have been foreshadowing.

I don't really like ice cream with my cobbler or cake as the case may be.

Ice cream is a special, "I desperately need ice cream" kind of thing for me. I'm really picky about ice cream and for a long time would only eat homemade ice cream. Putting it with cakey goodness feels like a disservice to the ice cream.
